Cheesy Roasted Cauliflower

This recipe is similar to my Au Gratin Cauliflower recipe, but easier and faster!

Because solo, twenty-something busy women don’t always have time to reduce a cheese sauce, but they should never sacrifice eating well for busy schedules.

Beware though, that this one is a little spicy.

I love spice, but if you don’t, omit the cayenne pepper and hot sauce.


1 cup cauliflower florets, steamed

1 t olive oil

1 t hot sauce

1 t blue cheese dressing

dash of cumin, cayenne pepper, and onion powder

optional: 1 wedge Laughing Cow Swiss Cheese and Parmesan to taste


Set oven to broil. Lightly grease a ramekin. Set aside.

In a small bowl, toss florets in all dressings and seasonings. Coat well and transfer to prepared dish.

Broil for about 5 minutes. At this point, if you’re using cheese, place the wedge on top and sprinkle on top Parmesan. Broil another 5 minutes or so, or until golden brown on top. Serve warm as a side.

Or if you’re having one of those rushed nights, triple the recipe for a big casserole helping.
