Ladies keep pinning this buffalo chicken sandwich concept, but the recipes themselves are less than healthy looking.
In theory, this sandwich isn’t such a health hazard. A little spiciness is great for digestion. There’s protein, too. Let’s make it as healthy as it can be.
-4 oz. broiled chicken breast, shredded
-2.5 T hot sauce
-1 t bleu cheese dressing (I found a pretty healthy, cholesterol- and calorie-free version from Hy-Vee‘s health market)
2 T chopped celery
1 T chopped onion
1/4 cup skim mozzarella
1-2 slices of whole-wheat bread
-Mix the hot sauce, dressing, celery, and onion into the shredded chicken. Blend ’til well coated with hot sauce.
-Transfer to bread. Top with mozzarella cheese and more bleu cheese dressing if you desire. I’d recommend toasting first, and then devouring.
