Collegiate Culinaire: Easy, Broiled Kebabs
This month’s issue of Real Simple’s “7 Easy Dinners” inspired this quick and easy meal. Why do we forget how easy it is to slide all of our favorite veggies and meats on a stick and broil for 5 minutes or less?
1 sweet red pepper
1 yellow pepper
1 carton of grape tomatoes
2 pounds of chicken, cut into 1- to 2-inch chunks
Chipotle barbeque marinade seasoning
-Marinade chicken, let sit for at least 10 minutes.
-Preheat oven to broiler setting.
-Begin threading veggies and fruits onto skewers. If you like, you can create a pattern like the one I used.
-Once you’ve speared your skewers with everything you like, lay the kebabs on a lightly greased broiling pan. Pop them in the oven for 2-3 minutes—around which time the chicken should begin appearing almost completely cooked through—and then remove and turn the skewers once. Place them back in the oven for another 1-2 minutes, or until chicken is fully cooked and vegetables are beginning to crisp on the ends.
-Serve with a well-seasoned side of corn or another tasty grain. Enjoy!
